MY VERSION OF PHO
Ingredients
2 Litres water
10cm julienne sliced leek (use green part of the leaf for low fodmap)
40g ginger, grated or in chunks
1 tbs dry ground ginger powder (optional)
1teaspoon fish sauce
4 – 6 dry star anise
4tbs stock cubes or 3tbs miso paste
1 red capsicum, julienne sliced
½ zucchini julienne sliced
½ carrot julienne sliced
½ cup Chinese cabbage or common cabbage
1 bunch of fresh coriander to garnish, (30g)
1-2 fresh red chilies
300 g bean sprouts , (ready to eat)
500g Tofu or prawns or chicken
3-5 cups of Asian Greens (Bok choy, pac choy )SiR INGREDIENTS
Method
- In a large pot, add water with leek, ginger, chili, lemon grass, stock/fish sauce or stock cube and boil for 30 to 40min.
- Add your choice of protein and cook for a further 10 min or until protein is cooked.
- Add your vegetables for a further 3-5min, avoid over cooking
- Garnish with coriander extra chili
